Made eggplant parmesan tonight, one eggplant probably made enough for four meals. Had a salad with grape tomatoes and onions on the side. Oh, and one glass of wine :)
Pretty easy:
One eggplant, spaghetti sauce, some mozzarella and parmasen, little bit of bread crumbs, and one egg. Cooked the eggplant in a little olive oil first, after dipping it into the egg and bread crumbs, then baked it for about 30 minutes.
I bought "Japanese style" bread crumbs - they were the only ones in the store that weren't full of tons of artificial garbage, these just had four ingredients.

Day 37
Since I've been eating less meat, and lunch meat is often pretty processed, I been having to find other sources of protein when I make sandwiches. Here's a couple that I have been enjoying lately:
This one is basically cheddar cheese and veggies, the more vegetables, the better:
Here I have lettuce, sprouts, onion, sprouts, tomato, carrots, green peppers, cheese, and mustard on wheat.
This next one might sound a little strange, but I love it! Peanut butter with shredded carrot and lettuce on wheat:
Probably sounds like an odd combination - but it actually is a wonderful blend of textures and flavors. The peanut butter is creamy and salty, and the veggies are cool and crisp. I also added sprouts, as I was trying to use them up before they went bad. I like sprouts, but it is so hard to use them all up before they turn, even if you're making salads every day.
